Its important to know why we didn't win a quote, instead of just closing the quote it would be nice to know we lost it and why .

This feature already exists. When configuring the Sales Opportunity status' you can give a status a set of sub-status'. So for example, the status of "Lost" can then have sub-status of "Price", "Delivery Time", "Availability", "Features" etc.
