Set the default 'From' email address on the new reply feature in documents

We can set the 'From' email address on template documents but not on the new reply feature that just came out in the latest version where we can reply to emails from the CRM.

    There a couple of requests for reply from functionality or ability to send from alias. It is seems a strange choice to allow this functionality in the template but not for standard emails or replies. If I use a template to send an email to a customer I can choose to use our "sales@" email address but if they reply I can only reply to them from within the CRM using my own email address not our "sales@". Using the "sales@" email address means my colleagues can see the replies when they come in to the generic "sales" mailbox.
