Allow activity log to be updated manually with selected pipeline stages

We have a lot of detailed stages in our pipeline but not all are required. However, when selecting a status, the CRM Activity Log shows all stages in between the starting stage and the updated stage, even when the intermediary stages have not been selected. Can we manually set the stages we wish to display in the Activity log as we set them?
